Pure Maple Syrup is classified into five different grades. The grades are determined by translucence (color) and flavor intensity. The five grades are Grade A Fancy, Grade A Light Amber, Grade A Medium Amber, Grade A Dark Amber, and Grade B.
All grades of syrup are delicious. We recommend using lighter syrup as table syrup and darker syrup for baking applications. However, everyone has their personal preference…there is no wrong choice. If you have any questions regarding the different grades of syrup, please feel free to contact us.
Grade A Fancy – Extremely light syrup with a very delicate maple flavor. We rarely produce Grade A Fancy on our farm.
Grade A Light Amber – Light syrup with a mild, sweet maple flavor. We generally produce Grade A Light Amber on our farm during very cold weather conditions in our sugaring season. We offer a selection of Grade A Light Amber in glass containers, and occasionally we will have a very limited quantity available in plastic containers.
Grade A Medium Amber – Moderately light syrup with a sweet maple flavor. We generally produce Grade A Medium Amber on our farm near the beginning of our sugaring season. We offer a selection of Grade A Medium Amber in glass containers, and we generally have a nice supply of Medium Amber syrup at our Maple Syrup Festival. We usually sell out quickly!!
Grade A Dark Amber – Darker syrup with a rich maple flavor. We generally produce Grade A Dark Amber on our farm in the middle of our sugaring season, when the weather starts to warm up. We offer a selection of Grade A Dark Amber year-round, in a variety of plastic containers.
Grade B – Dark syrup with a very robust maple flavor. We generally produce Grade B on our farm near the end of our season, when the weather is warm. We offer a selection of Grade B year-round, in a variety of plastic containers.
